Bone Broth Congee

One of my many passions in life is helping to nourish new moms postpartum. It is my absolute joy to share meals that I’ve cooked with love and intention to a woman who has just done the hardest thing she’ll ever do in life, which is to birth a human! Every meal I bring a new mother is made with a really rich bone broth. The nutrients in the broth is so wildly important for a woman who just gave birth. One of the meals I love to make for a mom is congee, which is a simple rice porridge. It’s warming and comforting and oh so nourishing.

Congee isn’t just for postpartum moms. I make it all the time for myself and my family! I make a giant batch of it with really good broth and warm servings of it up throughout the week with extra broth, topping it with whatever cooked vegetables (I love adding seaweed too!) I have on hand. The congee can be eaten any time of day, and I especially love it for myself as a breakfast topped with a poached egg.

Chicken Bone Broth Congee (serves 2)

1 cup cooked rice

3 cups chicken bone broth

Combine the rice and broth in a pot and bring to a boil. Reduce to a simmer and cook until the rice has broken down to a porridge-like consistency. Add salt to taste. Top with your favorite toppings (suggestions below)

Toppings:

poached eggs, leftover cooked meat or fish, sauteed greens and/or mushrooms, seaweed, sliced scallions or chives, your favorite fermented vegetables, sliced avocado, gomasio
